2016 Estate Cabernet Sauvignon

2016 Estate Cabernet Sauvignon

Gary Eberle fell in love with Cabernet Sauvignon while studying genetics at LSU, leading him to pursue winemaking at UC Davis and later establish Paso Robles as a premier Cabernet region. This estate-grown Cabernet is hand-harvested, with one-third of the must fermented under a submerged cap for depth and richness, while the rest undergoes stainless steel fermentation with twice-daily pump-overs for enhanced structure.Aged 22 months in 100% French oak (30% new), this wine boasts bold fruit, refined tannins, and elegant oak integration, capturing the essence of Paso Robles terroir.
