Gary Eberle fell in love with Cabernet Sauvignon while studying genetics at LSU, leading him to pursue winemaking at UC Davis and later establish Paso Robles as a premier Cabernet region.This estate-grown Cabernet is hand-harvested, with one-third of the must fermented under a submerged cap for depth and richness, while the rest undergoes stainless steel fermentation with twice-daily pump-overs for enhanced structure.Aged 22 months in 100% French oak (30% new), this wine boasts bold fruit, refined tannins, and elegant oak integration, capturing the essence of Paso Robles terroir.
