Winemaker Notes
During harvest, the Cabernet spent 28 days on the skins. This Cabernet is aged in 30% new French oak, 30% 2nd filled, and the rest neutral oak. This is the coolest vintage of the decade which means long hang times. This is an age-worthy Cabernet.
Tasting Notes
The Cabernet Sauvignon is one of Eberle's flagship wines. Our Estate Cabernet is full-bodied with rich black cherry and bright cassis notes. It has firm tannins with lush acidity. Subtle hints of cocoa and Brûlée linger on the dry finish.
Food Pairings
Our Estate Cabernet complements roasted garlic, rosemary lamb shank. It pairs nicely with goat cheese stuffed portobello mushrooms. If you have a charcuterie board, try this wine with a smokey blue cheese or chocolate truffles.
