2021 was a moderate growing season with no big highs or lows. Conditions during ripening were ideal with longer hang times and further development. Bolder more expressive aromatics and flavors will be a highlight from the 21' vintage. 40% new oak,
30% 2nd fill, 30% 3rd fill. 22 months in barrel.
Tasting Notes
The 2021 Cabernet Sauvignon is well balanced and elegant. This vintage has aromas of Bing cherry, cassis, and cedar.It has firm tannins with lush acidity. Subtle hints of spiced caramel, violet blossom, and black pepper.
Food Pairings
Cabernet Sauvignon pairs exceptionally well with grilled meats, such as nicely seasoned steak, roasted lamb, or aged cheddar cheese. Perhaps a mushroom risotto. Remember, personal preferences can vary, so feel free to experiment and find the combinations you enjoy the most.
