2025 Cotes-du-Robles Rosé
Crafted from 100% Grenache and fermented entirely in stainless steel, this rosé is made exclusively from fruit grown with rosé in mind. Two Grenache clones and three separate picks add complexity and balance. Harvested by hand in the early morning at 2123 Brix to achieve naturally low alcohol, the fruit arrives cold and is carefully sorted, destemmed, and gently pressed. The juice remains on the skins for a 24- hour soak to enhance flavor, aromatics, and color before being pressed to tank for cold settling. After racking two days later, a cold fermentation is initiated and allowed to proceed slowly for up to two weeks, preserving freshness and vibrant fruit character.
