2025 Estate Chardonnay
Crafted from 100% estate-grown Chardonnay, this wine was harvested in two separate picks to build depth and complexity. The earlier pick was barrel fermented and aged, while the later pick was tank fermented to preserve freshness and
vibrancy. Aged six months in a combination of 65% oak and 35% stainless steel, including 35% new French oak in foudre, the wine was lees stirred twice weekly for the first three months to enhance texture and richness. Partial malolactic
fermentation (15%) adds a subtle creaminess while maintaining bright natural acidity and balance.
Tasting Notes
Rich and expressive, this Chardonnay opens with Meyer lemon, apple blossom, and warm brioche layered over crème brûlée and almond toffee. Medium-bodied with a waxy texture and a touch of salinity, the palate is balanced by lightly toasted oak
and a long, polished finish.
Food Pairings
Pairs beautifully with almond-crusted salmon, crab cakes, creamy corn chowder, and pork tenderloin with roasted apples. The wines bright citrus, subtle oak, and creamy texture complement both rich seafood dishes and savory autumn-inspired flavors.
