2022 Vintage Port
Crafted from a distinctive blend of Trousseau and Touriga, this wine balances
elegance with power. Trousseau, known for its lighter hue and lifted aromatics of cherry and forest berries, is given a 3-day cold soak to enhance color and fragrance. Touriga, a true powerhouse, contributes depth & structure. Both varieties are harvested, destemmed, and fermented separately in small, temperature-controlled tanks. Midway through fermentationafter about one weekthe wine is fortified with barrel-aged, high-proof alcohol,
arresting fermentation and preserving natural sweetness. The wine then remains on skins for an additional month, with daily punch-downs to maximize extraction and complexity.
Aged for 30 months in cave conditions in a combination of Cognac and Rye whiskey casks, the result is a richly layered wine with depth, character, and a seamless integration of spirit and fruit.

The palate is full-bodied yet remarkably composed, delivering an uberbalanced profile where sweetness and structure are in perfect harmony. Subtle nuances of dried herbs add depth and intrigue, leading to a long, smooth finish that lingers with warmth and elegance.
Food Pairings
Pairs beautifully with stinky, salty cheeses, where the wines richness softens sharp edges and enhances savory depth. Dried apricots echo its luscious fruit character, while a decadent chocolate torte amplifies the notes of cocoa and burnt caramel for a truly indulgent finish.
